  1. A retaurant that serves something you won't find in just any other restaurant...  In La Trinidad, Benguet and Baguio City, for example, they have a restaurant that serves a local dish called "etag", and another one serving "kinuday".  These are actually native pig meat preserved by salting.  It makes chicken soup taste great.

Their edge I believe is that their food can become a tourist attraction.  Tourists will definitely like to have a taste of the place .

  2. well during my roadtrips in the philippines, i saw a place called exotic. They have crocodiles, to snakes, to rats etc. i'm a vegetarian so i don't eat exotic food.

  3. I prefer to limit my definition of 'exotic' food to food that is unique and indigenous to a place but not to include flora and fauna that are endangered.  Kangaroos, ostriches, and crocs used to be exotic food sources but since they are now farmed,  they are now virtually mainstream food.

Most  'exotic' food  include food that  is available in limited quantities in a given area, hence are mostly  endangered.  So if I can find food that does not use endangered species of the planet and yet is uniquely consumed in a given place,  that is what I will consider as truly "exotic" food.

    Crickets and cockroach, anyone?
