    In general terms, it is an anaerobic  biological process that converts one form of organic carbon to another.  One of the most widely applied uses of fermentation is in the production of ethanol for spirits, beer and wine.

    There other applications from industrial processes, wastewater treatment, food processing, to an aerobic process for tea leaves.


  2. In some plant cells and yeasts, fermentation produces CO2 and ethanol.  In animals it produces lactic acid and of course ATP in both.

    It is  anaerobic respiration, it occurs in the absence of oxygen.
