A HDMI is a port that you can connect a device too.  Such as your HD cable box (sat box) to your TV.  This cable or port will deliver both audio and video.  You can get a better picture and sound quality from this type of cable.

If you want HD video you NEED HDMI. But don't get fooled by people saying you need high priced cables. See the article at the 2nd link as to why, for most uses, budget cable will work just as well as expensive (e.g. Monster) cables.

It is the type of port that new digital TV's come with.  You can plug in your cable box using this port.  Also, you can plug in your XBOX or PS3 using this port.  The HDMI handles video and audio, unlike S-VIDEO whish only handles video.  If your looking at new TV's, it would be best to buy one with at least 2 or 3 HDMI ports.

HDMI stands for High-Definition Multimedia Interface.  Simply put, it's a relatively newer way to connect a video source (DVD player, PC, video game console, satellite receiver) to a TV/monitor.  

Since it is digital, it is an improvement over the older analog methods you're probably familiar with, such as coaxial (the stiff cable with the s***w-on connector), composite (the red/white for audio, yellow for video plug-in type), S-Video (the video only cable with the connector that looks like the same one you'd use to plug in your keyboard), and component (appears similar to composite, but more connectors, and with those cryptic Y/Pb/Cb/Pr/Cr labels).  It is also an improvement over a competing digital connector, DVI, in that it is able to carry audio & remote controls signals over the same cable whereas DVI does not.
