  1. It is a modified glucose polymer. Imagine glucose molecule joined together and with all or most of the hydrogen atoms of their hydroxyl groups substituted by hydroxyl groups creating ether like substances: O-H --> O-O-H.

    It is mainly used as a thickening agent eg in hair and skin care products.
