What is in a casual Enchilada?

I'm not seeing how an Enchilada is any different than a burrito.

  1. Any one making enchiladas from outside southern half of New Mexico rolls their enchiladas.

    Here in Southern half of New Mexico we make flat stacked enchiladas. So mine have no resemblence to a burrito at all. I hate making those messy rolled things.

    Dip the tortilla in simmering enchilada sauce to soften it. Lay it on the plate put a handful of meat, one of onions, one of cheese on it. lay another softened tortilla on top of that and put some more goodies on it. Pour about half cup of enchilada sauce over it, then fry 2 eggs over medium and put on top of that and serve it. You can sprinkle the lettuce/tomato salad around the edges to make it more festive.

    Rolled enchiladas are dipped in the simmering enchilada sauce also to soften, then you put a tablespoon of meat, one of onion, and some cheese in it and roll it up and lay it seam side down in a baking dish. When you have the dish filled, pour remaining enchilada sauce over it and bake at 350 F for 30 minutes. Then serve 2 rolls per serving with the lettuce/tomato salad, refritos, and seasoned rice.

    Both these enchiladas are done with corn tortillas and burritos are done with flour tortillas. Gut grenades are then dropped into deep fryer for crisping.

  3. Whereas I do not know what a "casual" enchilada is, in any case, enchiladas are very different from burritos.

    First, burritos are wrapped in a flour tortilla.  Enchiladas are prepared with corn tortillas.

    Second, a burrito is served as a sandwich is served--not necessarily hot--no toppings--just filling. If you want it smothered so it has to be served on a plate and eaten with a fork, you have to ask for it. Enchiladas are always served hot and smothered with red or green chile.

    Third, burritos are always rolled.  Enchiladas are often served stacked---corn tortillas stacked with filling between layers and swimming in chile.

    Fillings are usually similar, but burritos and enchiladas are completely different animals.
