  2. Sussex Pond Pudding

    This is a great suet pudding. When the crust is cut the melted butter and sugar flow out and form a pond on the dish around the pudding.

    Ingredients

    Serves: 6

    15 Gram Butter, softened ( 1/2 oz)

    350 Gram Suet crust pastry (12 oz)

    110 Gram Unsalted butter, well chilled (4 oz)

    175 Gram Demerara sugar (6 oz)

    1 Large Lemon



      

    Method

    Grease a 900 ml (1 1/2 pint) pudding basin with the butter. Roll out the suet crust pastry to about 2.5 cm (1 inch) thick. Reserve one quarter for the lid and use the large piece to line the basin.

    Cut the chilled butter into 8 pieces and put 4 of them into the lined basin, together with half the sugar. Prick the lemon all over with a sharp skewer or knife and press one end into the butter and sugar mixture, so that it stands upright. Press the remaining butter and sugar around and over the lemon.

    Dampen the edge of the crust at the top of the basin. Roll out the reserved suet crust pastry to a circle for the lid and use to cover the basin, pressing the edges together firmly, to seal. Cover closely with foil and place a saucer over the foil.

    Pour about 7.5 cm (3 inches) of water into a large saucepan and bring to the boil. Stand the pudding in the saucepan and cover the pan with its lid. Boil gently for 3 hours, topping up with more boiling water if necessary.

    Lift the basin from the saucepan, remove the foil and invert on to a large serving plate to unmould. If liked, put the pudding in a very low oven to dry off for a few minutes. Cut into wedges at the table, so that the 'pond' of sugar and butter can be seen as it runs out. Spoon some over each serving. Cut the lemon into slices and serve a slice with each portion.
