  1. I am not really sure. I usually go with the california roll or a cucumber roll. Yummy!


  2. The bright yellow crunchy pickle-like thing is pickled daikon.  Takuan.

  3. Oshinko is a type of Japanese pickle. Basically we use Japanese raddish like this  ( http://shunou.under.jp/wordpress/wp-imag... ) to make Oshinko or Takuwan that has been colored in yellow before it's finished.  So when you see oshinko roll, you will see yellow takuwan inside the roll like this: http://saprofood.com/images/036.jpg
