  2. Do you mean a little taster of a dish as a gift from the chef? That is an Amuse Bouche and I love them! Good way for chefs to try out new flavours and get customer feedback!

  10. It's called quite properly,, "Mr. Nouveau Cuisine, For these prices, you have about 2 minutes to get the rest of my food out here or I am going to kick your a.s.s. up around your neck", hahaha.   12. a way to charge more making more profit by using less food. also a very good thing to call it is PORTION CONTROL...something 100% of obese Americans need.

  13. Nouvelle Cuisine, somewhat outdated now but still used to maximise profit! however, I have no objection to food being well presented.

Ok, all the other responders gave you the name and their opinion regarding the amount of food presented.  It is generally a French presentation very small portions very prettily presented at very expensive prices.  It is nice if ou are really celebrating something very special but overall I think there are better uses for the amount of money you would be spending.
