What is it in banana peels that make charcoal briquettes?

  1. I'd never heard of using banana peels to make briquettes, so I did a quick search and found the link below.  They don't say what about the peels makes them suitable, other than that they "tie up the charcoal dust and sand," the other ingredients to make the briquettes.  The other link says that the sap in the peels is what holds the dust and sand together.
