I am a former chef and eat alot of prepared "Kimchee" and TaraTot is the most correct, any veg pickeld with the same type of spices and fermented to the point were tender are consider a Kimchee veg, at most good restauants in a Korean restaurants you will get a number of different one, cabbage daikon radish, leeks, bitter greens, potatos and even ones with dried fish or shrimp, sort of an appetizer before the meal.

    I go to several Korean Restaurants here in Toronto Canada and have lunch or dinner were they offer these dishes, they great with mains like bim-bi-bap or bul-go-ghi even pork bone soup tastes better with them.
