It's called lamb. There is no special name for it like Beef for Cow etc... But don't call it lamb if it isn't baby sheep meat!

lamb is lamb when it is a young, well, lamb, that is cooked.  If it is an older animal that is butchered the meat is called mutton.  Different, stronger taste.

As far as I know....its called cooked lamb! But my Aunt does make Moroccan Slow, which is a dish of cooked lamb...:)
