What is luau sauce and where do you get it?

  1. There's no quintessential luau sauce per say. Hawaiian culture is a melting pot; Polynesian, Japanese, Philippine, etc.

    The dipping sauce or marinade will match the food. If you go to your nearest Asian food store, you can pick out a variey of sauces to fit your taste buds. Peanut sauce for chicken satay, shoyu or teriyaki for beef, mango chutney or salsa for seafood, plum sauce or chili sauce for potstickers. Whatever sauce you pick out is "the" luau sauce.

    Here's a special luau sauce, one of 100's that you could make. Substitute spinach for the luau leaves, unless you have a source:

    Luau Sauce

    INGREDIENTS

    3 cups Yellow Onions (med. dice & sweat)

    3 cans (13.5 oz cans) Coconut Milk

    1 qt. Heavy Cream

    2/3 cup sugar

    1t salt

    1/2t dry white pepper

    2T unsalted butter

    1 egg

    1 cup Luau Leaves (blanched, chopped)

    PROCEDURE

    Sweat onions with butter, add heavy cream and coconut milk, stir for 1 minute and simmer. Add sugar, salt and white pepper. Mix until blended. Bring to a boil. Thicken with cornstarch mix until nappe. Whisk in 1 egg to 1-1/2 cup of sauce, add cooked luau leaves and mix thoroughly. Coat over oyster and bake under salamander until golden brown.

    And another sauce:



    Spinach Coconut Luau Sauce:

    3 tablespoons mincedMaui onions

    1/2 tablespoon minced fresh ginger

    2 tablespoons butter

    1 cup heavy cream

    1/4 cup coconut milk

    Salt, pepper, and sugar to taste

    1/2 cup cooked fresh luau leaves (may substitute with chopped fresh spinach)

    In a small saucepan, sauté onion and ginger in butter for 3 minutes, or until onion is translucent.  Add heavy cream, bring to a boil and reduce by half.  Stir in cooked luau leaves and coconut milk, and cook for 2 minutes.  Season to taste with salt, pepper, and sugar.


  2. Never heard of "luau" sauce, but I'm using a Hawaiian marinade tonight, on salmon.  It's the Kroger storebrand, and looks like Lawry's marinades (right next to them).  It's very good .......  Unless you meant POI, which is a luau staple.  That's made from taro and tastes pretty terrible:)

  3. I have lived in Hawaii all my life and there is no such thing as "luau" sauce. There are sauces in many of our recipes...ie teriyaki, shoyu, etc.  Are you thinking of Malolo syrup for shave ice.  If you can be more specific, perhaps I can help you out.
