Lecithin is a fatlike substance known as a phospholipid that is needed by every living cell in the human body.  The protective sheaths that surround the brain are made up of lecithin, and it plays a vital role in both muscles and nerve cells.  This nutrient is made up mostly of the B vitamin choline, but it also has the nutrients inositol, phosphorus and linoleic acid.

    Lecithin also helps to protect the cardiovascular system against arteriosclerosis. It does this by protecting against arterial damage by breaking up fatty deposits. Studies have demonstrated that one ounce of lecithin daily has shown to reduce blood cholesterol levels.
