  2. Wine is made by converting sugar, by fermentation, to alcohol. When the sugar is completely converted by yeast into alcohol, it is called DRY wine. If some sugar remains unfermented, we get sweet wine. Dry wine gives a feeling of dryness in the mouth on drinking.

    White wines become dry when sugars from the juice are converted to alcohol during the fermentation process. In some cases a wine is medium-dry when small amounts of residual sugars (RS) remain but not enough to push it over the edge into that sweet wine territory. There are also various degrees of "dryness" with certain varietals falling into the dry, medium-dry or medium-sweet to sweet categories.

    Sweet wines are made from grapes that have a higher sugar content.

    In dry wines the grapes are picked early in the harvest season when sugars in the grapes are at their lowest.

    In sweeter wines, the grapes are picked after the regular harvest when the sugar content is very high, or permitted to freeze on the vine so that water can be seperated from the sweet juice.

Dry wine has no residual sugar remaining.  Wines ferment to about 15% or so before all residual sugar is gone.  Generally, 12.5 and higher is a pretty dry wine with either no or trace amounts of residual sugar remaining.  Dry, to me, means being about to savor the nuances and complexities (if there are any!) without being distracted by the sweetness or fruitiness of a wine not fully fermented.  Although some wines like a Spatlese is much lower in alcohol and sweeter, and enoyed for those qualities.  Dry or not, its all about the winemaker's intent and enjoying the end product as it stands.
