"menu familiarization" is what you need to do every day if you want to be a successful waiter/waitress/host in a restaurant; the customers will not be impressed if the person taking their order keeps having to look at the menu to answer questions!

That sounds like a pretty specific technique for remembering the items on a menu ... I'd recommend any kind of a memorization system to help you learn the menu.
