NOS means Nitrous Oxide System. It is a system on a car that injects nitous oxide gas into the engine. This is because nitrous oxide contains more oxygen then air. The result is that the car gets a huge burst in horsepower as oxygen is a powerful fuel.

To your engine, nitrous oxide is a more convenient form of normal air.

Since we are only interested in the oxygen the air contains, nitrous oxide provides a simple tool for manipulating how much oxygen will be present when you add additional fuel in an attempt to release more power.
