The screen they watch is probably the on-board footage of their previous lap. They study it to see if there are any improvements to be made. Sometimes they watch other driver's onboard footage. They probably have other miscellaneous info on there as well (track temp, time left, standings, etc.)

The screen when the drivers are in the pit box? Qualifying times, wind speed, time, track out line and a timer for how long they've got left in qualifying. Oh and track/ air temperature.
