  1. There are two different classes of paprika (others have already given you the basics: ground red peppers).

    Spanish, or sweet paprika and Hungarian or spicy paprika.

    In Spain, in recent years, they began smoking paprika, and the result is (now get ready, cause this is really complicated) called "smoked paprika" .  Sometimes you actually see the word "ahumado" or "pimentón ahumado" on the package  (that's Spanish), and, of course this is the sweet variety.  This has been very in vogue in the world of cuisine lately.

    Hungarian paprika is an essential ingredient in Goulash.

It's a wonderful seasoning derived from dried and crushed peppers that have been smoked over a slow wood-burning heat.  You can use it in a sauce with pork or chicken, and it is great sprinkled into rice and potato dishes. It's originally from Spain, so you'll see it in many Spanish dishes, especially roasted meats.
