Question:

What is potato starch? How do you buy it and use it in recipies? i.e. gluten free cakes?

i need to no asap for an assignment. if anyone colud help it would be much appreciated.

  1. Personally, although it's gluten free, I can't use this, it gives me gripes. Same with cornstarch. I suspect it's because it's just pretty much pure starch with nothing else to buffer it.

    If I did use it, it would mainly be for thickening stuff.


  2. Sometimes  called  potato  flour,  this  gluten-free  flour  is  made  from  cooked,  dried  and  ground  potatoes.  It's  used  as  a  thickener  and because  it  produces  a  moist  crumb,  in  some  baked  goods.

    I  use  it  the  same  way  as  you'd  use  cornstarch.  And  I  like  it  better  than  cornstarch.  Not  much  difference  in  the  price.  I  get  mine  at  Krogers  and  go  to  the  Jewish  Foods  section  of  the  store  to  find  it.  Some  stores  only  stock  it  around  Easter  Holidays.
