As air rises and cools down adiabatically, the water vapour must condense to form water droplets. But in order to change from gas to fluid, water needs to give away heat. Since the water molecules have virtually no mass, it needs just anything like a dust corn, to dissipate that heat and form the droplets that make the clouds.

The same is valid for water droplets to become solid as snow. It needs to dissipate heat. That's why water droplets can be undercooled, i.e. long under freezing point, witout turning solid as ice and form snow.

Undercooled water is very dangerous for small aircraft like the one I fly. Because when those droplets meet my wings and propeller, ice is formed instantly as the heat is dissipated in the mass of the wing/propeller thus bringing my plane down in a matter of few minutes.
