I am a former chef and despite some of other filthy answers, they do use sometimes either pork or lamb intestines in certain types of sausage here in North America, also like the one lady said the artificial casing are from collegen a cellulose and gelatin based one, used for non pork sausage, like turkey and chicken and on ones like keilbasa, polish and ham style ones.

    Most "natural casings" are used in European delis and there some types of hot dogs, hotdogs are cased in plastic and cooked in the factory and then removed before packing they do a few with a natural casing but those are premium brand and small factorys.

    Now they use a man-made substance to put the sause in. Its made if gelatin and some other things...

  6. sheep intestine, smaller intestine of cows and more modern is synthetic casings that are not derived from animals. I prefer the non animal ones they brown more evenly and get nice and crispy.
