  1. If you mean the scientific method, you can find a good description here:

    http://www.sciencebuddies.org/mentoring/...

The exact steps and numbers are not "official" or set in stone, but what it all comes down to is observing and collecting data, making hypotheses, testing against those hypotheses via controlled experiment, seeing which hypotheses can withstand the tests, and reporting the results.

Why not test this out on the "wet back" observation?  Might it be due to the sweat from your back?  If so, then you should get the same results on other surfaces, not just grass, and also not mild temperatures.  If you get negative results, then it's most likely the grass.

  2. The first part of your questions was answered adequately.  The second part has to do with a process called transpiration that occurs in the leaves of plants.  Transpiration is the loss of water vapor through tiny holes in the leaves called stomata.  The loss of water cools the leaves, helps move water from the roots to the leaves and concentrates minerals dissolved in the water.  You can see water transpired by putting a glass jar over a section of the grass for a short time.  The water will condense inside the glass.

To apply the scientific method you might do the following:

When you lie on the grass, your back gets damp (Observation).  You ask the question: Why did my back get wet when I lie on the grass?  (Question formation).  I think the grass is losing water from the blades. (Hypothesis)  I'll place a glass jar over a section of the grass to collect any water vapor that is lost from the grass. (Experimentation)  The presence of significant water condensed inside the glass jar verifies my hypothesis.  (Verification of hypothesis)  All plants transpire. (Theory)
