    A "Scoville Unit" is actually a measure of capsaicin, the chemical that makes a hot pepper hot. Most capsaicin is found in the ribs and seeds of a pepper.

    Wilbur Scoville invented the scale by having a whole bunch of volunteers eat different kinds of peppers beginning with the bell pepper. He used a solution of water and sugar to "put out the fire" depending on how many squirts it took to do so would determine the heat of the pepper. I think each unit squirt is equal to a measurement of 100.

    Capsiacin is a chemical compound that stimulates receptor endings in the skin, especially the mucous membranes. The reason why your tongue detects the heat quickly is because the compound is so unique it basically locks in to the receptors in your tongue.
