When used in a dish eaten with chips (fries) I have heard it called "flake".

I'm a meat eater but I would never eat shark again.  They are being wiped out esp in the Pacific where they are catching them for their fins tossing them back in the water to die.  The sharks eat rays which eat shellfish so with more rays around the shellfish fisheries are collapsing.
