  1. Well have you put pork in them?   that is the traditional way in red sauce.  For the red sauce you use dried chile ancho pods.  For different things you can put in the middle you can make raisin tomales which is just the masa with raisins mixed in with lots of sugar and some cinnamon so they are sweet.  Another thing you could do which my aunt did was make the masa like you normally do but flavor it with vanilla and some brown sugar and regular sugar and cinnamon then when stuffing them put like apple filling or make your own apple filling.  I recommend making your own apple filling cus it tastes better.  then eat 'em while they are warm and you can eat it with ice cream and it's sooooooo good.  The apple thing was an experiment and it worked good.  Basically you could try anything.  the thing about it is if you have the $, time and patience and how much ingredients you want to waste if it doesn't turn out good.

Oh! hamburger meat tamales are the best.  Especially if the meat is hot and spicy.  Then when they are done I love to put guacamole ontop, spead all over the top, and if it's not hot or spicy enough more salsa!

  2. Nothing is as wonderful as a good old pork or beef tamale. The English have Pasties and they are sort of a beer stew filling, meat ,potatoes, carrots .The masa and potatoes don't go together. I love Empanadas (sp) I've had sweet meat and sweet beans.

  3. experiment alittle bit thats what i do. Sometimes I add rice, cheese, peas. And sometimes I add beef, chicken, steak or pork. Sometimes I add tomatos sauce with fried onions and peppers other times I dont add the sauce and just add the onions and peppers. And try different spices. It will also give it different flavor.

  4. i have made black bean tamales (refried black beans, onions, and cilantro), sweet potato chipotle tamales (http://www.vrg.org/journal/vj2006issue4/... and green mole chicken tamales (with green mole from a jar, and blanched shredded chicken). all of these have been really deliciou. i have also made chocolate tamales with and without marzipan - a great dessert!

note the sweet potato chipotle and the black bean tamales can be made vegan very easily, if you have picky friends like i do.

  5. I'll just correct your Spanish grammer.  The singular form of tamale is, in fact, tamale, while the plural form is tamales.  Don't know how you figure this is irregular from the rest of the language.  Unlike English, Spanish has very few irregularities.
