It's 95 degrees outside and only one room in my house is air conditioned...unfortunately it's not the kitchen. What is something good I can make that doesn't involve the oven?

  1. you know what i love on hot nights. really nice fresh breadrolls, store bought pasta salad and a cold roast chicken from the store. so good =) i could eat like 3 of them. for dessert get some nice fruit or sorbet.

  2. honestly? take out..order a pizza,chinese..

or make a nice salad, lots of seasonal veggies out there this time of year..

  3. Use the camp stove and cook outside.

Anything you can do with a short burst from the microwave or use a tabletop broiler (Farberware) under the exhaust fan or my favorite.....

The Jet Stream oven. If you don't know what that is or where to get one go to http://www.nesco.com/ for more information.

  4. Cut up some tomatoes into bite sized chunks and thinly slice some red onion. Peel and chop a small cucumber and mix the vegetables together. Sprinkle with basil and oregano and feta cheese and top with a little red wine vinegar and olive oil. Voila, you've got an authentic Greek salad.

  5. Stuffed Cabbage Rolls. (microwave)

    Ingredients

    8 cabbage leaves

    2 tablespoons oil

    1 medium onion finely chopped

    1/2 pound mushrooms finely chopped

1 cup quick cooking white rice

    1/2 cup parmesan cheese

    1/2 teaspoon salt

    1 teaspoon pepper

    16 ounces Spaghetti sauce

    1/2 cup shredded mozzarella cheese

    Method

Trim rib of each cabbage leaf very thin. In 11 by 7 inch baking dish, cook cabbage leaves and 2 tablespoons water, covered on high 8 to 10 minutes until tender, drain. Set aside. In a 2 quart casserole, cook oil and onion, covered on high 3 minutes. Add mushrooms; cook covered, 3 to 4 minutes until tender. Stir in uncooked rice, cheese, salt and pepper. On center of each cabbage leaf, place about 1/3 cup rice mixture. Fold bottom of leaf over filling, fold sides toward center. Roll tightly, jelly roll fashion. In 11 by 7 inch baking dish, arrange cabbage rolls seam sides down. Pour spaghetti sauce over cabbage rolls. Cook, covered on high 8 to 12 minutes until tender, rotating dish halfway through cooking. Sprinkle with mozzarella cheese; let stand, covered 3 minutes.

    Serve with cold sliced meat.

  6. chicken quesadillas are great. I usually make them in a skillet. just saute some left over chicken (or poached chicken) with some seasoning mix (you can buy them in packets at the grocery store) then I just put one tortilla in the skillet top with chicken some onions and Mexican cheese and another tortilla. cook on each side till toasted and cheese is melted. We like to top them with shredded lettuce, tomatoes, olives, salsa and sour cream. Or if that is too much cooking make a taco salad. you can use tortilla chips and other taco toppings. I just cook up some ground hamburger or ground turkey breast with some taco seasoning. Takes less than 5 minutes to make and it makes a great dinner. Plus, with it being hot out it is a good excuse to make Margaritas and make it a Mexican night!

  7. you can microwave meat loaf and it tastes just like you baked it. I bought those steam bags from ziploc. They make great steamed chicken b*****s or fish. Just add some fat free italian dressing for added flavor! I also love the steamed veggies they make, you can add some Parmesan cheese and butter if you aren't watching your waist. if you like it spicier, just add some cajun seasoning. i also often cook in a crock-pot! You can go online and find tons of awesome recipes for free. They even have desserts like apple brown betty or a great chocolate pudding cake. I make barbecued chicken by just dumping the chicken pieces in there and puring a bottle of GOOD barbecue sauce over the top. You would not believe how good it turns out, just make sure it has no skin to begin with or it will be oily. Hope this helps!!

  8. Tuna salad.

  9. A sandwich

    Salad

Cook breakfast.....you can cook bacon in the microwave so it doesn't require heating up the stove, scramble some eggs, and make some toast only taking 10 minutes total for the whole process minimizing the amount of time the stovetop has to be on.
