A soy paste is a condiment used by chinese in their cooking it is from soya beans, it could be salty or spicy or yet sweet.Soy paste is not use in any variety of Pilipino Sausage or "Longganisa". The ingredients use in a typical Pilipino Sausage or "Longganisa" are the following : Salt, Brown Sugar, Coco Vinegar, black Corn Pepper and the Preservative Saltpeter, this recipe was my Grandma's, way back 1963.

  3. its essentially loose tofu paste. you dont have to use soya to make longanisa, you can substitute with rice flour or wheat flour. Longanisa is essentially the same as Chorizo but with less curing and much spicier.
