What is that crumbly dry white mexican cheese?

it comes in like a block? it's really salty.

I used to like it until I got a huge chunk in my mouth.

  1. queso fresco (fresh cheese)  I don't much care for the large chunks either.  I don't like that it doesn't really melt, either.


  2. yes it is queso cotija.  it is dry and salty and should not be eaten in chunks, just grated or crumbled and sprinkled atop your food, think of it like feta or parmesan cheese.
