Ok actually there are two sauces.. one is brown and thick.. and the other is red and has the texture of Ketchup.

How do you say this in pinling chinese? and in English?

Also what ARE these sauces?? I cant make out any distinct flavours.. but they are really good!! (especially the brown one)

  1. The brown-colored one you refer to is named -

    Miso (pronounced Me-So)  it's a salty-flavored bean, semi-mashed and placed on meat.

The red, "textured like Ketchup" sauce is named -

Kochujang (pronounced Ko-chew-jong)  this is the sauce made from red peppers and other spices.

It is usually mixed with Garlic, Water, Dashida (similar to Beef Bouillon), and just about any other spice you would want to add.

This is also great-tasting on meats.

  2. The brown and thick one might be:

    Fermented Soybean Paste.

    Korean: 된장  Romanized: Dwen-jahng

    Pinyin Chinese: dàjiàng

    Pronounciation: Tha-chi-ahng

The red, ketchup textured one might be:

    Hot Pepper Paste

    Korean: 고추장  Romanized: Goh-Choo-Jahng

    Pinyin Chinese: là dòubànjiàng

    Pronounciation: La-tho-ppan-chi-ahng
