What is the allowable residue of nitrate in the food?

Allowable by whom?  Different regulatory agencies have different limits.  The US EPA standard for drinking water is 10ppm, but I couldn't find a limit for food.  I suspect it is much higher, as nitrates (and nitrites) are used to preserve some meats...
