It depends what you are editing... remember, the computer graphics stuff is all custom - some would consider that "the best" and it runs many hundreds of thousands of dollars. Most of it isn't even for sale because you need a bunch of people on site supporting the software and the server farm and the workstations to run it...

It just depends if you are looking for film editing, digital video editing, CGI rendering and editing or the special effects or audio/sound design editing... and a lot of the time they use many different tools in a single film depending on the specific scene requirements...

Computers for editing by hollywood standards is decidely low budget. Maybe ok for cartoons or scifi stuff with a lot of CGI.

You may be thinking of the off-line editors such as AVID. These were computers that put together a look-a-like of the finished film and when the director/producer approved, an EDL (edit decision list) was generated and sent to the actual film editor. This was time code based.

Eventually the off-line gear was sophisticated enough that the finished computer version was actually good enough for TV broadcast, and the EDL was eliminated. Most TV work is now done this way, and with the advent of standard ized DV, and now HDV  essentially any program/computer is usable.

For a feature film, the editing is NOT done on an Apple or Windows laptop. That is because the datarate for digitized film is many times greater than DV or even HD television. Silcon Graphics workstations used to be popular but i don't know what is hot currently.
