That totally depends on a.) your skill level, and b.) what kind of skiing you will be doing. If you're looking for an "off the shelf" answer, Atomic Arc has more wins on the podium (in ski racing) than any other ski over the last 4 years or so and are making some phoenominal skis right now. Many would argue that hand made skis are actually the best, and the majority of "race stock" winning podium skis (including the Atomics) are actually hand made. Many swear by a company called Stockli for handmade skis. Assuming you are not racing and looking for something to buy in a store for "all mountain" use, I would definitely recommend Atomic (check out the SX11's), with Rossignol's new lineup coming in a close second this year.

The XSki is totally awesome. Custom made in the small confines of a mini warehouse in Belgium by two former world class skiers. Presently, you cannot purchase or even order the skis. But, as soon as they acquire the pending patents, availability will be right around the corner.
