there are so many brownies recipes out there... which one is the best that is chewy & chocolatey?

  1. Outrageous Brownies

    Copyright 1999, The Barefoot Contessa Cookbook

    ingredients

    1 pound unsalted butter

    1 pound plus 2 cups semisweet chocolate chips, divided

    6 ounces unsweetened chocolate

    6 extra-large eggs

    3 tablespoons instant coffee powder

    2 tablespoons real vanilla extract

    2 1/4 cups sugar

    1 ¼ cups flour, divided

    1 tablespoon baking powder

    1 teaspoon kosher salt

    3 cups diced walnut pieces

    Instructions

    Preheat oven to 350 degrees F. Grease and flour a 13 by 18 by 1 1/2-inch

    sheet pan.

    Melt together the butter, chocolate chips, and unsweetened chocolate on top of a double boiler. Cool

    slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate

    mixture and cool to room temperature.

    Stir together the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts

    and chocolate chips with flour to coat. Then add to the chocolate batter. Pour into prepared pan.

    Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the

    pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not

    overbake! Cool thoroughly, refrigerate well and cut into squares.

  3. Strawberry Brownie Delight

    1 (19.8 ounce) package brownie mix

    1 cup strawberry preserves

    1 (12 ounce) container frozen whipped topping, thawed

    10 fresh strawberries, sliced

    1/2 cup chocolate syrup

    Prepare the brownie mix according to package directions, and pour batter into two 8 inch round cake pans. Bake as directed. Cool completely.

    Run a knife around the outer edge of the cake pans, and tap out one of the rounds onto a serving plate. Spread half of the strawberry preserves over the top. Place the second brownie round on top, and spread the remaining strawberry jam on it. Frost the top and sides of the cake with whipped topping. Arrange the sliced strawberries on top. Drizzle with chocolate syrup, and serve.

  4. Triple-Chocolate Brownies

    5oz unsweetened baking chocolate

    2/3cup butter or margarine

    1 3/4cups sugar

    2teaspoons vanilla

    3eggs

    1cup all-purpose flour

    1cup chopped nuts

    1cup semisweet chocolate chips (6 oz)

    1container (1 lb)  chocolate frosting

    1.Heat oven to 350°F. Grease bottom and sides of 9-inch square pan with shortening. In 1-quart saucepan, melt baking chocolate and butter over low heat, stirring frequently; remove from heat. Cool slightly.

    2.In large bowl, beat sugar, vanilla and eggs with electric mixer on high speed 5 minutes. On low speed, beat in chocolate mixture. Beat in flour just until blended. Stir in nuts and chocolate chips. Spread in pan.

    3.Bake 40 to 45 minutes or just until brownies begin to pull away from sides of pan. Cool completely, about 2 hours. Spread with chocolate frosting. For regular brownies, cut into 6 rows by 4 rows; for mega-size brownies, cut into 3 rows by 3 rows.

    Peanut Butter Swirl Brownies

    2/3 cup granulated sugar

    1/2 cup packed brown sugar

    1/2 cup butter or margarine, softened

    2 tablespoons milk

    2 eggs

    3/4 cup  all-purpose flour

    1/2 teaspoon baking powder

    1/4 teaspoon salt

    1/4 cup peanut butter

    1/3 cup peanut butter chips

    1/3 cup baking cocoa

    1/3 cup semisweet chocolate chips

    1. Heat oven to 350ºF. Grease square pan, 9x9x2 inches. Mix sugars, butter, milk and eggs in medium bowl. Stir in flour, baking powder and salt.

    2. Divide batter in half (about 1 cup plus 2 tablespoons for each half). Stir peanut butter and peanut butter chips into 1 half. Stir cocoa and chocolate chips into remaining half.

    3. Spoon chocolate batter into pan in 8 mounds, checkerboard style. Spoon peanut butter batter between mounds of chocolate batter. Gently swirl through batters with knife for marbled design.

    4. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely about 1 hour. For 16 brownies, cut into 4 rows by 4 rows.

    You can make a boxed brownie - but crush up Oreo's and put them in the mix before baking.  Follow the baking instructions on the box.  When the brownies are cooled, i ice with vanilla ice and sprinkle some more crushed Oreo's on top!!!

  5. 4oz (115g) Cannabis Butter

    2oz (60g) Self Raising Flour

    8oz (225g) Soft Brown Sugar

    1.5oz (45g) Cocoa Powder (NOT Drinking Chocolate Powder)

    1oz (30g) Ground Almonds

    2 Eggs

    Grated Rind Of One Large Orange (Important!)

    1/2tsp Baking Powder

    Chocolate Butter Icing/Frosting

    Making icing for a cake really isn't an exact science - it's difficult to give amounts as you may have a different sized baking tray meaning more or less brownies, or you may just have a different personal preference. The following amounts are a guideline so feel free to tweak as you wish!

    4oz (115g) NORMAL Butter or Margarine

    1 - 2oz (30 - 60g) Cocoa Powder

    8 - 10oz (225 - 285g) Icing (Powdered/Confectioners) Sugar

    2tsp Water, as needed

    Maltesers (optional, but totally worth it)

    Kitchen Scales

    Sieve

    Large mixing bowl

    Wooden spoon

    Shallow baking tray

    Greaseproof paper / Wax paper





    Method - Hash Brownie Base

    First, sieve the flour, baking powder and cocoa powder into a large mixing bowl.

    Add the ground almonds, sugar and orange rind and mix together well.

    Next, add the butter and eggs and beat the mixture together until smooth.

    Bake at 150ºC (300F or Gas Mark 2), in a shallow dish, greased and lined with greaseproof (wax) paper for 50 - 55 minutes.



    Method - Chocolate Butter Icing/Frosting

    Just mix together the ingredients in a bowl and spread over the top of the brownie.

    As an optional tasty extra, smash up a couple of packets of Maltesers and sprinkle them over the top. Do this straight away so they will stick in the icing rather than just fall off when you try and take a bite!

    Cut into at least 16 pieces and serve! If it's your first time cooking with cannabis, be sensible and don't have more than one or two in the space of an hour, no matter how absolutely fantastic they taste.

  6. This one is the best that is chewy & chocolatey! And quick and easy which makes them even better!

    Brownies

    2 ozs unsweetened chocolate

    1/4 c butter (1/2 stick)

    1 c sugar (I use a little less because I like them less sweet)

    2 eggs

    1 tsp vanilla

    1/2 c flour

    1/8 tsp salt

    1/2 c chopped walnuts (or pecans) even better if you toast them first

    1/2 c semisweet chocolate -- chunked from a bar is the absolute best, but chocolate chips will work.

    Preheat oven to 325. Line 8 or 9 inch square pan with wax paper, butter paper. Melt chocolate and butter in medium pan. Add sugar, eggs and vanilla, mix. Stir in flour, nuts, chunked chocolate and salt and pour into prepared pan. Bake about 25 minutes. (I go for slightly underbaked - that way they stay nice and chewy). Cool in pan on rack for 5 minutes, then flip over out of the pan, peel off the wax paper and continue to cool on rack. Eat them quick or cover them up tightly once cool so they stay chewy.

  7. I love double chocolate cheese cake brownies

    get a regular mix and add extra chocolate chips to it add cream cheese and use a tooth pick to swirl the cream cheese inside te brownie mix on top. cook as regular.
