Yes Fillet Mignon melts in your mouth but it's far from the best tasting meat on the steer.

Also, the "deckel" on a ribeye( that outside part) is the ultimate part of the steer.

So when picking out a ribeye, pick one from the first 4 ribs( they contain the most deckel). Not to be confused with Brisket deckle.
