Tile floors are excellent with drains in them...most restaurants then cover the area behind bars, in kitchens, dish pits, and server areas with thivk heavy mats with holes in them and gooves..This allows the water, food scraps, , grease, etc....to drain away from server and employee feet thus cutting down on falls and slips....however, they must be thoroughly cleaned with degreaser on both side  and rinsed and then out back in place to avoid bacteria growth and smells.....
