Lots of 4 and 5 star hotels in downtown Vancouver.  I'd guess either the Hotel Vancouver or the 4 Seasons.

Pan Pacific is very nice, right on the waterfront by the cruise ship terminals, walk to lots of shopping

4 or 5 star.  Nice restaurant at top as well.

The Sutton Place Hotel is favored by movie stars as it also has luxury long term residences.  I have had a great stay at the Wedgewood Hotel which is an intimate boutique hotel in downtown Vancouver.  The Opus is like the Paramount in New York very hip, chic but because of Skytrain construction is looking terrible on the outside but still uber chic inside.  The Hotel Vancouver is classic Vancouver and if you miss your dog, they even have a house dog on loan to take out for walks.
