I can't answer all your questions, but can answer a few.

Elliot Clark, Liverpool Theatre School and Merseyside Dance and Drama Centre are all very respected dance schools in the area.

Best secondary schools would be The Bluecoat in Wavertree and Merchant Taylors in Crosby amongst others.

There are a variety of gyms, the usual you get in most towns and cities, but I do find there membership a bit pricey.
