What is the best resort to stay at on the beach?

I am planning a trip to either the Caribbean, Mexico, or somewhere around there for next summer and I need some help on where to go and where to stay. Most importantly, I would like to go somewhere very romantic, but also a lot of fun. My fiance and I plan to have a quiet exchange of vows on the beach, and spend the rest of our time honeymooning. We don't want to be in the middle of everything, but we will definitely want to be able to go out if we choose to want to do that a few nights. We would like to swim with dolphins, snorkel, and do that zip line. If anyone has any suggestions, that would be greatly appreciated!

Ohio Rios in Jamaica is great!  Pretty secluded but lots of stuff to do outside of resort if you wish.  Such as Dunns River Falls.
