  1. My typical salad is romaine, hard boiled egg, fat free cheese crumbles w/ fat free catalina dressing and my homemade rye croutons.  But I also like romaine, mandarin oranges, green onions, edamame, almonds with low fat ginger asian dressing.  My last is romaine, cucumbers, grape tomatoes, black olives, artichoke hearts, chickpeas, low fat feta cheese with a homemade balsamic dressing.

    What can I say, I love salads!


  2. Taco Salad

    INGREDIENTS

    1 pound lean ground beef

    1 (1 ounce) package taco seasoning mix

    1/2 (14.5 ounce) package nacho-flavor tortilla chips

    2 cups shredded Cheddar cheese

    1/2 (15 ounce) can kidney beans, drained

    1/2 cup ranch-style salad dressing

    chopped tomato

    chopped lettuce

    chopped green onion

    DIRECTIONS

    Place ground beef in a large, deep skillet. Cook over medium-high heat, stirring to crumble until well done; drain. Stir in taco seasoning mix. Set aside to cool.

    Place chips into a large bowl, and crush into bite-size pieces. Combine with seasoned meat, cheese, beans, tomatoes, lettuce, and green onions. Pour dressing over all, and toss to coat.


  3. I like to have a homemade grilled chicken salad, or sauteed chicken.

    I use any Italian dressing. My favorite dressing is Ken's or Emeril's. I cut the ch. breast in slices, then I cook it in some italian dressing. I add a little cayenne pepper, and a little brown sugar.

    Then when the juices dry up some. I continue to sautee the chcken until it gets a bit browned.

    I throw the chicken and juices over any type of veggies, or salad.

  4. My favorite quick salad is baby lettuce, dried cranberries chopped, toasted or candied nuts (walnuts or pecans) chopped, bleu cheese crumbled, and raspberry vinaigrette. This is my favorite lunch.

    I love asian chicken salad, they're quick and easy, especially with packaged produce from the store. You can buy the lettuce, carrots already shredded, and it's easy to blanch pea pods in the microwave (heat water to boiling, add pea pods, wait 1 minute, drain, add cold water) and julienne them. They sell the fried noodles in the grocery store, but it's easy to make fried won ton skins too. They sell cooked chicken, or you can use leftover chicken, or poach some easily in purchased broth. Dressing can be bought, or simply made with a touch of mustard, honey, garlic, ginger, and some rice wine vinegar. Whisk in soy sauce to taste, and sesame oil, and then whisk in light olive oil.

    Taco salad is easy with leftover chicken or sauteed ground beef, lettuce, cheese, and toppings of your choice (some suggestions are tomatoes, lettuce, olives, onions, green onions). Serve with corn chips and a dressing made of equal parts chunky salsa and sour cream.

  6. Romaine Lettuce,Tomatoes,Cucumbers,Black Olives,Croutons, a little shredded cheese.  I also like to add grilled chicken and serve with Ranch Dressing or Caesar.  So good!

  7. I like salads with smoked turkey and american cheese, romaine lettuce, tomatoes, cucumbers, red cabbage, shredded carrots, olives, hard boiled eggs, and croutons. With lots of thousand island dressing.
