  1. The most common type are crustaceans, as in shrimp, prawns, lobster, crawfish etc. if you want to go expensive (!)

What is important to understand is that we all have a tendancy to overcook seafood, which renders it a bit, either tough or dry or bland, or simply has no taste.

All seafoods need a certain "love and understanding" in the cooking, and most need to be cooked "rare"... which most people never learn.

Ask questions about each type, and maybe I could help..!!

  2. I'm from the Chesapeake Bay region in Maryland-- so that's a BIG question. There's nothing like our oysters-- steamed, fried or as part of oyster stuffing around the holidays! A huge pile of steamed blue crabs is irresistible. I can't live without a huge clam bake filled with oysters, clams, crabs, shrimp and mussels occasionally. A grilled maple bourbon salmon steak is hard to beat. Seared sesame grilled tuna .....

Okay, too hard a question-- you got me.
