It kinda depends on what you want to use the sausage for... Kielbosa is good for soups, beef sausage for inbetween a roll, andoui and boudain sausage for cajun cooking, pork sausage for breakfast patties or as a main course for dinner..

Lamb and mint (had some today actually, they were yummy).

Pork and apple.

Anything hand-made and with a relatively low fat content, so that they don't shrivel up to nothing when you cook them :)  And you should grill them, don't fry them; grilling keeps the flavour in and it's healthier too (not that it really makes much difference once you're eating sausages).  Serve with mashed potato, peas or green beans, and red cabbage.  Delicious!

Homemade, you won't believe how much better it is than storebought.  But if you can't get homemade, bratwurst is the best.
