What is the best temperature to fry breaded shrimp,should i peel them before frying & at what temperature ?

i have some 20-24 shrimp per pound which i want to fry to look like LONG JOHN SILVERS for a tasty threat tomarrow

  1. you may peel them all the way or just leaving the tail on.Fry at 350 degrees.splitting them down the middle,but not all the way through,just to make them lie flat or whats called buttfly them. makes them look fancier.


  2. The deep fryer for almost all your frying needs should be set at 350 degree Fahrenheit.

    Now, coming to time it takes to fry. If you buy pre-breaded frozen shrimp (20 to 24 count), it will take about 3 to 4 minutes.

    If you are going to prepare a batter, and fry them, I will do it in two steps. I will fry them in small batches for 2 minutes per batch. Let them cool off. Now, re-fry them just before service. It will make the batter taste crunchier.

    By the way, the frozen battered shrimp is pre-fried. They just fry for 3 minutes before service.

    Shrimps:- Fried

    Fresh shrimp (no heads)

    Fresh eggs

    Bread crumbs

    Cooking oil

    Salt

    Peel, de-head, de-vein and wash the shrimp in cold water. Lightly salt them. Put well stirred eggs into a bowl. Dip the shrimp in the eggs. Drain the excess egg off for a few seconds and place them in the bread crumbs. Make sure they are well covered with the crumbs.

    For best results refrigerate the battered shrimp for about an hour. Deep fry at 350 degrees until they rise to the top (1½ - 3 minutes) or until golden brown.

    I like to leave the tail tips on to use as a handle.
