The wheat market fluctuates a lot and some times will change many times over the course of a day. If news of crop failures comes in the market price usually goes up. If news of a great crop comes in, the price may go down. Keep an eye on the market and sell when you think it is as high as it will go.

I presume you must have a garden plot size wheat crop. If you were a farmer, you would know that the wheat field can't stand after ripening, it must be harvested or it will mold. So for farmers, the best time to sell wheat is when it is ready for harvest.

For a small plot being sold at the local garden market, harvest when the wheat is ripe and store and sell at the local garden market on demand from customers.
