What is the best way to cook red cabbage??

  1. I cut mine in quarters and steam it. Most of the time though I just eat it raw. Delicious!


  2. We usually shred, saute it with onions and garlic in lard. Then we add a 1 cup beet juice and 1 cup elderberry or black currant juice. Season with bay leaves, thyme, salt and peber. Let it simmer for 20 min. Reseason and serve or let stand until ready to eat and then heat again.

    In the old days (our grandparents did so) they cooked it for hours but we find it a pity and the more modern refined German cookbooks suggests only to cook for 30 min in total.

    We also really like to add 1-2 star anise and cook with that. It gives a really nice licorice flavor.

    - and we don't use cider vinegar as someone suggests. That is very american and not really used in the German kitchen.

  3. shred it, heat a cup of cider vinegar or lemon juice in skillet, 2 tablespoons bacon fat, and 6 slices crumbled crispy bacon. When this comes to a boil, spread the cabbage over the top of the liquid, cover tightly and turn off the heat.

    Recipe from my great great grandmother Sophia Pfingsten. How much more German can that be?
