  1. If you want to make sushi, you must know the history of sushi, and what sushi really is and means to people. Sushi is not just raw fish rolled up in seaweed, packed with rice. I suggest you learn how to make simple fish, rice, seaweed "California rolls" before learning how to make any sushi without meat.

(I would suggest going to some Japanese-culture related websites, and first learning about sushi, before trying to make it.)

  2. find yourself a Japanese cookbook. i got one for about $5 and a Waldenbooks once.

  4. Try it for yourself! Get a book about sushi, get the gear and ingredients, and start experimenting.

In the beginning, I reccomens not making a whole maki with the same filling - in stead cut the nori with a really sharp knife, and make half-sized. That way you'll get to try many more different ones.

My trick: have plasticwrap on top of the bamboo-mat, and make the roll inside the wrap (just don't roll the plastic INTO the roll. Cut the makiroll, while still inside the plastic, that way you keep it nicely together.
