What is the chemical content of chicken essence?

..i know its made out of chicken broth....but what is the chemical content of chicken essence?...or more specifically "Brand's essence of chicken"...

    i dunno.. maybe it contains chickens and their sweet sweet thoughts :)


  2. It's a little mysterious, actually... they're far more willing to say what it does NOT contain than what it does.  (For instance, it does NOT contain MSG, contrary to the first answer to the Q.)

    It also does not contain fats or preservatives, and is "low in sodium".

    It does contain "a small amount of natural caramel" to maintain the "rich brown color".

    A 70 g bottle contains "less than 40 calories", so it can't be anywhere close to pure protein.  (1 g of protein has about 4 calories, so the maximum protein content is about 14%.)

    Also, apparently it's a liquid.

    So I'm guessing they just really do boil the chicken (meat only) down in water, separate out any fats, add in a little caramel to make it look right, and then bottle it up.  So it contains random chicken proteins, maybe a little collagen.  Not too much - it would gel - so perhaps they break down the proteins somehow?  Acid like lemon juice would do it, but that would leave it tasting sour.
