What is the correct way to make the Brazilian drink Caipirinha?

Many mixed drink books mention to use rum or vodka, but the actual Brazilian way does not use those liquors. I want to make what amounts to a total amount of a pitcher of Caipirinha.

  1. The actual Brazilian Caipirinha uses "Cachaça" also called "Pinga". It is a distillate of sugar cane. It is not so easy to find it in USA but it is not impossible. Here in Brazil the women prefer change the Cachaça by Saquê (Japanese distillate of rice). The taste improves a lot in my opinion. Other changes that we do here in Brazil is change the fruit. Again, women enjoy change the lemon by strawberry.

  2. It is very similar to a mojito.

Muddle 3-4 lime wedges, 1 tablespoon of fine sugar, add ice, 2oz of rum (leblon is the most widley used) and top with club soda.
