Depending on where you are, it costs next to nothing to hire a waiter.  For example, in NC, a waiter makes $2.15 an hour (or something close to that), and then their tips.  Now, when its time to do the payroll, the pay has to equal $5.15 per hour worked.  If business was slow, and the waiter claimed few tips and divided up he only made $4.00 an hour, as the employer you have to cover the difference.  Now, if he weekly makes much more than $5.15 per hour with his tips and the $2.15 per hour you pay, then all  you're out is the $2.15.  The customers paid the rest.

    You might get a college kid to work for $20 for the night. You might pay a couple hundred dollars to get a formally dressed professional from a swanky restaurant. It all depends on what you want.

    If you're trying to figure out what it costs to staff a restaurant, that's a totally different story. Waiters in most "family" (chain) restaurants usually earn considerably less than minimum wage, because it's assumed that they'll make up the difference in tips. You'd need more than one waiter at a time, though.
