What is the criteria used by the defense and prosecution when selecting a jury?

Each side will try and figure out what people will be most sympathetic to their case.  If you read about most famous cases, both sides will have experts with them called "jury consultants."  These people are supposed to be expert in selecting jurors who would be more apt to see things one way rather than another in a jury trial.
