  1. Let us start by describing what is Gluten first.

    Gluten is the elastic substance left-over after the starch has been washed away from the dough made of wheat.

    Celiac patients are not be given foods containing gluten.

    Gluten is also found in Rye and Barley

    Now, Glutinous rice refers to its stickiness, it  has nothing to do with gluten. Corn protein is some times called corn gluten, it is not harmful to celiac patients.

    In General Glutenous means sticky and stretchy and elastic flour. Glutenous flours all have peptide chains that make it elastic and sticky, but only one given type of a peptide chain is called as gluten

    'High protein, low starch' flours are high gluten wheat flours.


  2. Flour sold as high-gluten or simply gluten flour has been treated to remove most of its starch, which leaves it with proportionately more of the proteins that produce gluten.

Gluten is in all kinds of flours it is the part that makes the flour stick together ,if you ever made dough you will notice that when you add the liquids the flour becomes pasty , some people are allergic to gluten therefore they must eat products where the gluten was removed  I might compare apple and oranges when I tell you this it's like skim milk and Homo milk. and some people are allergic to both therefore they drink Soy milk instead.

    Also labelled 'sweet rice flour', glutinous rice flour is used to make sweets and cakes, most famously the Chinese New Year doughnuts known as jin doi, round balls of chewy dough filled with sweet bean paste, thickly covered with sesame seeds and deep fried. They have a resilient, chewy texture and are so popular that they are sold in Asian shops all year round. Many South East Asian cakes based on this sticky rice flour are coloured, steamed and rolled in freshly grated coconut. Japanese mochi, glutinous rice balls, may be plain or filled with sweet pastes.
